Prosciutto Di San Daniele
Prosciutto di Parma BIO is a Protected Designation of Origin (PDO) Ham. Prosciutto di Parma’s crown can only be given to the tights of well reared pigs, checked with extreme care and attention during seasoning.
During the making of Prosciutto di Parma the only ingredient allowed is salt, meat cannot be smoked or frozen. Moreover Prosciutto di Parma Bio is characterized by the total are lack of preservatives. The only raw ingrediets used are good pork meat, seas salt used knowingly, time (seasoning lasts up to 16/18 months), a lot of windy and a little humid air.
It is served in thin slices, cut more or less finely according to one’s taste, as a starter, and it is used in more complex recipes, like the one of classical tortellini. It can be served alone or with fresh sweet fruits, like figs or melon. It matches perfectly with white aromatic wine. It can be also combined with red, light and fruity wine.
