Lard in Jars “nzogna”
Lard (in jars) is widely used by the industry for bakery products (breadsticks, loaves, crackers, in pizza and focaccia doughs, in packaged bread) and for pastries. The presence of lard in the dough makes the gluten mass in the product more fragrant, increases the volume of the dough by slowing the loss of moisture, and confers flavour and fragrance.
It is often used in Campania, for historical preparations such as 'Il Casatiello', a traditional rustic dish generally prepared for Easter by all Neapolitan families.
