Broccoli “Friarielli” of Naples in EVO
Broccoli “friarielli” are a variety of broccoli rabe grown in Campania, and one of the signature vegetables of Naples. Friarielli are generally prepared sautéed in olive oil with garlic, salt and little spicy red chilli.
In Neapolitan cuisine the friarielli form an almost indissoluble combination with sausage, of which they represent the traditional side dish. As street food, bakeries sell sandwiches stuffed at the moment with sausage and friarielli. In Neapolitan pizzerias there is never a lack on the menu also pizza with sausage, friarielli, grated Parmesan and fiordilatte (from some called "pizza alla carrettiera").
INGREDIENTS: broccoli, extra-virgin olive oil, wine vinegar, garlic, chili pepper and salt.
